Les Hautes Terres is run by husband-wife team, Geneviève & Gilles Azam, and located in the Aude Valley; on the very edge of the Languedoc at an altitude of 600m. Geneviève & Gilles are proud custodians of their land, and all of the vineyards and wines are 100% organic. Josephine Cremant d'Limoux NV is an awesome traditional method sparkling wine which for us rivals a lot of Champagnes. Made from 60% Chardonnay, 30% Chenin Blanc and 10% Mauzac grown on limestone rich soils; the wine is initially aged for 9-months in oak, and then a further 18-months in bottle during the second fermentation. A Brut Nature, so bone-dry, it has notes of green apple, toast and almond; which move to a bright palate with strong mineral finish. A great wine to enjoy as an aperitif.
